1 lb beef sirloin, cut into 1-inch cubes

4 tablespoons unsalted butter

4 garlic cloves, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and black pepper, to taste

1 tablespoon chopped fresh parsley (for garnish)

1 lb baby potatoes, halved

½ cup shredded cheddar cheese

¼ cup sour cream

2 tablespoons milk

1 teaspoon garlic powder

½ teaspoon paprika

Chopped chives (for garnish)

Instructions
 

Begin by preparing the potatoes. Place the halved baby potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes.

    Once cooked, drain the potatoes and return them to the pot. Using a potato masher or fork, gently smash the potatoes to your desired level of texture (some chunks are okay).

      Stir in the shredded cheddar cheese, sour cream, milk, garlic powder, and paprika into the smashed potatoes. Keep warm while you prepare the steak bites.

        In a large skillet, heat 2 tablespoons of the butter over medium-high heat. Season the beef sirloin cubes with salt and black pepper.

          When the skillet is hot, add the steak bites in a single layer. Cook for about 2-3 minutes on one side without moving them, allowing a nice crust to form.

            Flip the steak bites over, then add the remaining butter, minced garlic, and fresh thyme to the skillet. Continue cooking for another 2-3 minutes until the steak is cooked to your desired doneness (medium-rare is 130°F).

              Remove from heat and let the steak bites rest for a minute. Stir the steak bites to coat them in the garlic butter.

                Serve the steak bites on a plate alongside a generous scoop of cheesy smashed potatoes. Garnish the steak bites with chopped parsley and the potatoes with chopped chives.
