8 large shrimp, peeled and deveined

3 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon paprika

Salt and pepper, to taste

1/4 cup fresh parsley, chopped

4 slices sourdough bread

1 cup shredded mozzarella cheese

1/2 cup shredded sharp cheddar cheese

2 tablespoons olive oil

Instructions
 

In a skillet over medium heat, melt 2 tablespoons of butter.

    Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Add shrimp to the skillet, followed by paprika, salt, and pepper. Cook for about 2-3 minutes on each side until shrimp are pink and cooked through.

        Turn off the heat and sprinkle the chopped parsley over the shrimp, mixing to combine, then set aside.

          Preheat a large skillet or griddle over medium heat. While the pan heats up, assemble your sandwiches.

            Lay two slices of sourdough bread on a clean surface. On each slice, layer half of the mozzarella cheese and half of the cheddar cheese.

              Evenly distribute the garlic butter shrimp on top of the cheese, then add the remaining mozzarella and cheddar cheese on top.

                Place the other two slices of sourdough bread on top to form the sandwiches.

                  Brush the outer sides of the sandwiches with olive oil and the remaining tablespoon of butter.

                    Carefully place the sandwiches in the preheated skillet and cook for about 4-5 minutes until golden brown.

                      Flip the sandwiches and cook for an additional 4-5 minutes, pressing down gently with a spatula for even browning.

                        Once both sides are golden and the cheese is gooey, remove from the skillet and let them cool for a minute before slicing in half.
