4 salmon fillets (about 6 oz each)

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 tablespoon lemon juice

Zest of 1 lemon

Salt and pepper to taste

1 can (15 oz) white beans (cannellini or great northern), drained and rinsed

2 cups spinach or kale, chopped

2 tablespoons olive oil

1 teaspoon red pepper flakes (optional)

Prepare the Salmon: Pat the salmon fillets dry with paper towels and season both sides with salt and pepper.

    Make the Garlic Butter: In a small saucepan, melt 4 tablespoons of butter over medium heat. Add the minced garlic and thyme, stirring for about 1 minute until fragrant. Remove from heat, and stir in lemon juice and zest.

      Cook the Salmon: Heat a non-stick skillet over medium-high heat. Add a drizzle of olive oil. Once hot, place the salmon fillets skin-side down. Cook for 4-5 minutes until the skin is crispy.

        Baste and Flip: Carefully flip the salmon fillets and pour the garlic butter over them. Cook for an additional 4-5 minutes, or until cooked through and easily flakes with a fork. Remove from heat and cover to keep warm.

          Sauté the Greens: In the same skillet, add the chopped spinach or kale and sauté for 2-3 minutes until wilted. If using, add red pepper flakes for a bit of heat.

            Incorporate the Beans: Stir in the white beans to the skillet with the greens, mixing gently just to heat through for about 2 minutes. Season with a pinch of salt and pepper.

              Serve: Plate the garlic butter salmon alongside a generous scoop of lemon white beans with sautéed greens. Drizzle any remaining garlic butter over the top.
