2 ½ cups fresh ripe tomatoes, sliced

1 ½ cups shredded mozzarella cheese

1 cup mayonnaise

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried basil

½ teaspoon salt

¼ teaspoon black pepper

1 pre-made pie crust (or homemade if preferred)

Fresh basil leaves for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    If using fresh tomatoes, slice them and let them drain on paper towels for about 30 minutes to remove excess moisture. This will prevent the pie from becoming soggy.

      In a mixing bowl, combine the shredded mozzarella, mayonnaise, grated Parmesan, garlic powder, dried basil, salt, and black pepper. Mix until well combined.

        Place the pre-made pie crust into a 9-inch pie dish.

          Layer half of the drained tomato slices evenly over the bottom of the pie crust. Then, spoon half of the mozzarella mixture over the tomatoes. Repeat with the remaining tomatoes and mozzarella mixture, finishing with a final layer of the mixture on top.

            Bake in the preheated oven for about 35-40 minutes, or until the top is golden brown and bubbly.

              Remove from the oven and allow it to cool for about 10-15 minutes before slicing.

                Garnish with fresh basil leaves for a pop of color and flavor before serving.
