Ingredients

1 lb flank steak, sliced thinly

1 large onion, finely sliced

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon dried thyme

1 teaspoon garlic powder

Salt and pepper to taste

4 ounces cream cheese, softened

½ cup shredded Gruyère cheese

½ cup fresh parsley, chopped

Kitchen twine (for tying pinwheels)

Instructions

Prepare the Onion Filling: In a skillet, heat olive oil over medium heat. Add the sliced onions and a pinch of salt. Sauté until they are caramelized and golden brown, about 15-20 minutes. Stir in balsamic vinegar, thyme, and garlic powder, then remove from heat and set aside.

Season the Steak: Lightly pound the flank steak slices between two sheets of plastic wrap to an even thickness. Season both sides of the steak with salt and pepper.

Spread Cream Cheese: On one side of each steak slice, spread a thin layer of softened cream cheese, leaving a small border around the edges.

Add Fillings: Evenly distribute the caramelized onion mixture over the cream cheese, followed by a sprinkle of Gruyère cheese and chopped parsley.

Roll and Tie: Starting at one end, tightly roll each steak slice into a pinwheel shape. Secure the roll with kitchen twine at intervals to keep the filling contained.

Sear the Pinwheels: In the same skillet, add a bit more olive oil if necessary and heat over medium-high heat. Once hot, place the pinwheels seam side down and sear for 2-3 minutes per side until browned and cooked to your desired doneness (medium-rare is ideal).

Rest and Slice: Once cooked, remove the pinwheels from the skillet and let them rest for 5 minutes. Carefully remove the twine and slice into rounds.

Serve: Arrange the sliced pinwheels on a serving platter, garnished with additional parsley and a sprinkle of salt.

                  Prep Time: 30 minutes | Total Time: 1 hour | Servings: 4

                    - Presentation Tips: Serve the pinwheels on a rustic wooden board, drizzling some balsamic glaze over them for added flavor and visual appeal. Pair with a fresh salad for a complete meal.
