2 cups arborio rice

4 large onions, thinly sliced

4 cups vegetable broth

1 tablespoon olive oil

2 tablespoons butter

2 cloves garlic, minced

1 teaspoon thyme (fresh or dried)

1 bay leaf

Salt and pepper to taste

1 cup gruyère cheese, shredded

Fresh parsley for garnish

Instructions
 

Heat the olive oil and butter in a large pot over medium heat.

    Add the sliced onions and cook, stirring frequently, until they become caramelized (approx. 20-25 minutes). They should be soft and golden brown.

      Stir in the minced garlic and thyme, cooking for another minute until fragrant.

        Add the arborio rice to the pot, and stir it with the onions for about 2 minutes until lightly toasted.

          Pour in the vegetable broth and add the bay leaf. Season with salt and pepper.

            Bring the mixture to a boil, then reduce to a simmer. Cover and cook for about 20 minutes, or until the rice is creamy and al dente, stirring occasionally.

              Remove the bay leaf and stir in half of the shredded gruyère cheese until melted and blended.

                Spoon the rice into bowls and top with the remaining cheese. Optionally, broil in the oven for a few minutes to melt and brown the cheese until bubbly.

                  Garnish each serving with fresh parsley before serving.
