Ingredients

For the Focaccia:

4 cups all-purpose flour

2 teaspoons salt

1 tablespoon sugar

1 packet (2 1/4 teaspoons) active dry yeast

1 3/4 cups warm water (about 110°F)

1/4 cup olive oil (plus more for drizzling)

Fresh rosemary sprigs (for garnish)

For the Toppings:

1/2 cup pizza sauce

2 cups shredded mozzarella cheese

1 1/2 cups sliced pepperoni

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Crushed red pepper flakes (optional, for added heat)

Instructions

Prepare the Focaccia Dough: In a large mixing bowl, combine the warm water, sugar, and yeast. Allow it to sit for about 5-10 minutes until frothy.

Mix the Dough: Add the flour, salt, and olive oil to the yeast mixture. Stir until a rough dough forms.

Knead the Dough: Transfer the dough onto a floured surface and knead for 5-7 minutes until smooth and elastic.

First Rise: Coat a large bowl with olive oil, place the dough inside, cover with a clean kitchen towel, and let rise in a warm place for about 1 hour, or until doubled in size.

Preheat the Oven: Preheat your oven to 425°F (220°C).

Shape the Dough: Once risen, punch down the dough and transfer it to a greased baking sheet (about 13x18 inches). Use your fingers to stretch and press the dough into the pan, creating dimples all over the surface.

Second Rise: Cover the dough with a towel and let it rise for another 20-30 minutes.

Add Toppings: Spread the pizza sauce evenly over the focaccia. Sprinkle with mozzarella cheese, layer with pepperoni slices, and sprinkle garlic powder and Italian seasoning over the top. Add crushed red pepper flakes for a spicy kick if desired.

Bake: Drizzle with olive oil, then bake for 20-25 minutes, or until the cheese is bubbly and golden brown.

Garnish and Serve: Once out of the oven, let it cool for a few minutes. Garnish with fresh rosemary sprigs for an aromatic touch before slicing.
