Ingredients

1 cup cottage cheese

3 large eggs, separated

1/4 teaspoon cream of tartar

1 teaspoon garlic powder (optional)

1 teaspoon onion powder (optional)

Salt to taste

Fresh herbs for garnish (such as chives or parsley, optional)

Instructions

Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.

In a medium bowl, combine the cottage cheese and egg yolks. Mix until well blended. If you're using garlic and onion powder, add them to this mixture for extra flavor.

In another clean bowl, whisk the egg whites with the cream of tartar until stiff peaks form. This should take about 2-3 minutes. The whites should be fluffy and shiny.

Gently fold the egg white mixture into the cottage cheese mixture. Start by adding a small amount of the egg whites first to lighten the batter, then carefully combine the rest, folding until no streaks remain. Be careful not to deflate the egg whites.

Spoon the fluffy mixture onto the prepared baking sheet, forming round mounds about 2-3 inches in diameter. You should be able to make about 6-8 pieces.

Bake in the preheated oven for 25-30 minutes, or until the bread is golden brown on the top and firm to the touch.

Allow the cloud bread to cool slightly on a wire rack before serving.

Prep Time: 10 minutes | Total Time: 40 minutes | Servings: 6-8 pieces

                  - Presentation Tips: Serve warm, garnished with fresh herbs if desired. These can be enjoyed on their own or as a base for your favorite spreads, sandwiches, or breakfast toppings!
