1 pound flank steak, trimmed

1 cup spinach, fresh

1/2 cup roasted red peppers, sliced

1/2 cup crumbled feta cheese

1/4 cup sun-dried tomatoes, chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

Preheat your oven to 375°F (190°C).

    Place the flank steak between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, pound the steak to about 1/4 inch thick to tenderize it and make it easier to roll.

      In a mixing bowl, combine the fresh spinach, roasted red peppers, feta cheese, sun-dried tomatoes, garlic, oregano, paprika, salt, and pepper. Mix well to create the filling.

        Spread the filling mixture evenly over the flattened flank steak, leaving about an inch border on the edges.

          Starting from one end, carefully roll the flank steak tightly into a cylinder shape. Secure the roulade with kitchen twine or toothpicks at evenly spaced intervals to keep it together during cooking.

            In a large oven-safe skillet, heat a drizzle of olive oil over medium-high heat. Once hot, sear the roulade on all sides until browned (about 2-3 minutes per side).

              Transfer the skillet to the preheated oven and roast the roulade for about 20-25 minutes, or until it reaches your desired doneness (135°F for medium-rare).

                Remove the roulade from the oven and let it rest for at least 10 minutes before slicing.
