1 teaspoon salt

1/4 cup unsalted butter, cold and cubed

1/4 cup fresh herbs (such as rosemary, thyme, or chives), finely chopped

3/4 cup buttermilk

1 tablespoon honey (optional, for a hint of sweetness)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, sift together the flour, baking powder, baking soda, and salt.

      Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.

        Stir in the finely chopped fresh herbs until evenly distributed.

          Make a well in the center of the mixture and pour in the buttermilk and optional honey.

            Gently mix with a spatula or wooden spoon until just combined, being careful not to overwork the dough.

              Transfer the dough to a floured surface and gently pat it into a rectangle about 1 inch thick. Fold it over itself a couple of times (this helps to create flakiness).
