8 slices of day-old bread, cubed

1 pound breakfast sausage, crumbled

8 large eggs

2 cups milk

1 cup shredded cheddar cheese

1 cup diced bell peppers (mix of red and green)

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

For the Country Gravy:

1/4 cup butter

1/4 cup all-purpose flour

2 cups milk

1 teaspoon black pepper

1/2 teaspoon salt

Instructions
 

Prepare the Casserole:

    - In a large skillet, cook the crumbled breakfast sausage over medium heat until browned and fully cooked. Drain excess grease.

      - In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until well combined.

        - Add the cubed bread, cooked sausage, bell peppers, and half of the cheddar cheese to the egg mixture. Gently fold everything together until the bread is well coated.

          Assemble the Casserole:

            - Grease a 9x13-inch baking dish with cooking spray or butter. Pour the mixture into the baking dish, spreading it evenly.

              - Top with the remaining cheddar cheese.

                - Cover the dish with plastic wrap and refrigerate overnight to allow the flavors to meld.

                  Bake the Casserole:

                    - Preheat the oven to 350°F (175°C).

                      - Remove the plastic wrap from the baking dish and bake uncovered for 45-50 minutes, or until the casserole is puffed and golden brown in the center. A knife inserted should come out clean.

                        Make the Country Gravy:

                          - While the casserole is baking, melt the butter in a saucepan over medium heat.

                            - Whisk in the flour and continue to cook for 1-2 minutes until golden.

                              - Gradually pour in the milk, whisking constantly until the mixture thickens and is smooth (about 5-7 minutes).

                                - Season with salt and black pepper to taste.

                                  Serve:

                                    - Once the casserole is done baking, let it cool for about 5 minutes. Cut into squares and serve warm with a generous drizzle of country gravy on top.
