4 large onions (preferably sweet onions like Vidalia)

1 cup Italian breadcrumbs

½ cup grated Parmesan cheese

2 tablespoons fresh parsley, finely chopped

1 teaspoon garlic powder

½ teaspoon dried oregano

½ teaspoon paprika

Salt and pepper to taste

4 tablespoons olive oil

½ cup vegetable broth

Fresh thyme sprigs for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Onions: Peel the onions and slice off the tops and bottoms. Carefully cut a deep X into the root end of each onion, going about halfway down, and gently pull the layers apart to create a blooming effect.

      Make the Filling: In a mixing bowl, combine breadcrumbs, Parmesan cheese, parsley, garlic powder, oregano, paprika, salt, and pepper. Mix well until combined.

        Fill the Onions: Drizzle olive oil inside and on top of each onion. Generously stuff the breadcrumb mixture into the layers of the onions, pressing down slightly to pack it in.

          Arrange in Baking Dish: Place the filled onions upright in a baking dish, and pour the vegetable broth into the bottom of the dish to help create steam and keep them moist while baking.

            Bake: Cover the baking dish with aluminum foil and bake for 25-30 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the onions are tender and the tops are golden brown and crispy.
