4 whole English muffins, split in half

4 large eggs

1 cup shredded mozzarella cheese

1/2 cup diced bell peppers (red and green)

1/2 cup diced onions

1/2 cup cooked and crumbled breakfast sausage (optional)

1/4 cup sliced black olives

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Place the split English muffin halves on the baking sheet, cut side up.

      In a skillet over medium heat, add a little cooking oil and sauté the diced bell peppers and onions until they are tender, about 3-4 minutes. If using, add the cooked sausage and heat through.

        In a small bowl, crack the eggs and whisk them with salt, pepper, and Italian seasoning until fully combined.

          Spoon the sautéed vegetable (and sausage if used) mixture evenly onto each muffin half.

            Carefully pour a small amount of the egg mixture over each muffin half, ensuring some egg fills the nooks and crannies.

              Top each muffin with the shredded mozzarella cheese and sprinkle black olives on top.

                Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly, and the eggs are set.

                  Remove from the oven, and allow to cool for a minute before garnishing with fresh basil leaves if desired.
