4 slices of whole grain bread

4 large eggs

4 slices of smoked ham

1 avocado, sliced

1 tablespoon butter

1/2 cup shredded cheddar cheese

1/4 teaspoon garlic powder

1/4 teaspoon black pepper

Salt to taste

Fresh arugula or spinach for garnish

Hot sauce (optional, for serving)

Instructions
 

Heat a non-stick skillet over medium heat and melt the butter.

    While the butter is melting, season the eggs with garlic powder, black pepper, and a pinch of salt.

      Crack the eggs into the skillet, being careful not to break the yolks, and cook for about 2-3 minutes until the whites are mostly set.

        Place the ham slices on top of the eggs and sprinkle the cheddar cheese over everything. Cover the skillet with a lid for an additional 2-3 minutes, until the cheese melts and the eggs are cooked to your liking.

          Meanwhile, toast the slices of whole grain bread until golden brown.

            Once the eggs and ham are cooked, carefully use a spatula to lift a sandwich layer (egg, ham, and cheese) onto the toasted bread slices.

              Top each sandwich with a few slices of avocado and a handful of fresh arugula or spinach.

                Close the sandwiches with another slice of toasted bread and slice them in half to serve.
