2 cups fresh strawberries, hulled and sliced

1 tablespoon sugar (adjust to taste)

1 teaspoon lemon juice

2 cups vanilla ice cream

1-2 cups sparkling water or lemon-lime soda

Fresh mint leaves for garnish

Optional: Crushed ice

In a medium bowl, combine the sliced strawberries, sugar, and lemon juice. Toss gently to coat the strawberries in sugar and lemon juice. Let them macerate for about 10-15 minutes until they release their juices.

    Once the strawberries are ready, take tall glasses and add a scoop of vanilla ice cream to each glass, filling about one-third of the glass.

      Spoon a generous amount of the macerated strawberries on top of the ice cream, allowing some of the juices to drizzle down.

        Slowly pour sparkling water or lemon-lime soda over the ice cream and strawberries, filling the glass until the liquid reaches the rim. Add crushed ice if desired for extra chill.
