4 cups vegetable or chicken broth

2 tablespoons miso paste (white or yellow)

200g ramen noodles (fresh or dried)

1 cup thinly sliced shiitake mushrooms

1 cup baby spinach

2 green onions, chopped

1 carrot, julienned

1 boiled egg (optional, for topping)

1 tablespoon sesame oil

1 teaspoon soy sauce

Salt and pepper to taste

Nori sheets (seaweed), for garnish

Instructions
 

In a large pot, heat the sesame oil over medium heat. Add the sliced shiitake mushrooms and sauté for about 3-4 minutes until they are tender.

    Add the vegetable or chicken broth to the pot and bring it to a gentle simmer.

      Stir in the miso paste and soy sauce, mixing well to ensure the miso is fully dissolved. Season with salt and pepper to taste.

        Add the julienned carrot and let it simmer for another 5 minutes until the carrot is slightly softened.

          Meanwhile, cook the ramen noodles according to the package instructions in another pot. Drain and set aside.

            Once the broth is ready, add the baby spinach and let it wilt for about 1 minute.

              To serve, divide the cooked ramen noodles into bowls, then ladle the hot miso broth with mushrooms and spinach over the noodles.

                Top each bowl with a boiled egg (halved if using), chopped green onions, and a few strips of nori for garnish.
