1 cup strong brewed coffee, cooled

2 tablespoons coffee granules (for an extra kick)

2 cups mascarpone cheese

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

20-24 ladyfinger cookies

Unsweetened cocoa powder, for dusting

Dark chocolate shavings, for garnish (optional)

Instructions
 

In a bowl, mix the cooled brewed coffee and the coffee granules until dissolved. Set aside.

    In a separate large mixing bowl, combine the mascarpone cheese, powdered sugar, and vanilla extract. Mix well until smooth.

      In another bowl, whip the heavy cream until stiff peaks form. Gently fold this whipped cream into the mascarpone mixture until well blended. Be careful not to deflate the whipped cream.

        Quickly dip each ladyfinger into the coffee mixture one at a time, ensuring they are soaked but not soggy, then layer them in a rectangular dish to form the first layer.

          Spread half of the mascarpone mixture over the layer of soaked ladyfingers.

            Repeat the process with another layer of dipped ladyfingers, followed by the remaining mascarpone mixture.

              Smooth the top with a spatula and dust generously with cocoa powder.

                Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld and the tiramisu to set.

                  Before serving, add dark chocolate shavings on top if desired.
