In a medium bowl, combine the black beans, chopped bell peppers, corn, garlic powder, cumin, salt, and pepper. Mix well until all ingredients are evenly distributed.
Lay a flour tortilla flat on a clean surface. Place a generous amount of the black bean mixture in the center, then sprinkle a layer of both cheddar and mozzarella cheese on top.
Fold the sides of the tortilla over the filling, then tightly roll it up from the bottom to the top, securing all the ingredients inside. Repeat this process with the remaining tortillas and filling.
Heat olive oil in a large skillet over medium heat. Once hot, add the burritos seam-side down. Grill for about 3-4 minutes per side or until golden brown and crispy, pressing gently to ensure they cook evenly.
To ensure the cheese is fully melted inside, you can lower the heat to medium-low and cover the skillet for an additional minute or two.
Remove the burritos from the skillet and let them cool slightly. Cut in half and sprinkle with fresh cilantro. Serve with salsa or your choice of hot sauce.
