1 lb chicken thighs, boneless and skinless, cut into bite-sized pieces

1/4 cup soy sauce (low sodium preferred)

2 tablespoons honey

2 tablespoons rice vinegar

2 tablespoons brown sugar

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

1 tablespoon sesame seeds

3 green onions, chopped (for garnish)

Cooked white or brown rice, for serving

Instructions
 

In a medium bowl, whisk together the soy sauce, honey, rice vinegar, brown sugar, sesame oil, minced garlic, and grated ginger until smooth.

    Heat a large skillet over medium-high heat. Add the chicken pieces to the skillet and cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and lightly browned.

      Pour the teriyaki sauce mixture over the cooked chicken in the skillet. Stir to coat the chicken evenly with the sauce.

        Bring the sauce to a simmer and then add the cornstarch slurry to thicken the sauce. Stir continuously until the sauce thickens to your desired consistency, about 2-3 minutes.

          Remove the skillet from the heat and sprinkle sesame seeds and chopped green onions on top for garnish.

            Serve the chicken teriyaki over a bed of cooked rice and enjoy!
