1 lb boneless chicken thighs, cut into bite-sized pieces

1/4 cup soy sauce

1/4 cup apple cider vinegar

3 tablespoons brown sugar

1 tablespoon honey

2 cloves garlic, minced

1 tablespoon ginger, minced

1 teaspoon sesame oil

2 tablespoons vegetable oil

1/4 cup green onions, chopped (for garnish)

Sesame seeds (optional, for garnish)

Steamed rice (for serving)

Instructions
 

In a medium bowl, whisk together soy sauce, apple cider vinegar, brown sugar, honey, minced garlic, minced ginger, and sesame oil to create the marinade.

    Add the bite-sized chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (up to 2 hours for deeper flavor).

      Heat vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken (reserve the marinade) and stir-fry for about 5-7 minutes or until the chicken is browned and cooked through.

        Pour the reserved marinade into the skillet with the cooked chicken, bringing it to a simmer. Cook for an additional 3-5 minutes until the sauce thickens slightly.

          Remove from heat and garnish with chopped green onions and sesame seeds, if desired.
