1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/2 cup heavy cream

1/2 cup instant vanilla pudding mix

1/4 cup chocolate chips

1 tablespoon water (if needed for the chocolate)

Instructions
 

Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease it well.

    In a bowl, whisk together the flour, baking powder, and salt. Set aside.

      In a large mixing bowl, cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.

        Beat in the egg and the vanilla extract until fully incorporated.

          Gradually add the dry flour mixture to the wet ingredients and mix until just combined.

            Scoop a tablespoon of dough into each mini muffin cup, filling them about two-thirds full.

              Bake for 10-12 minutes or until the edges are golden and a toothpick inserted in the center comes out clean. Allow to cool completely on a wire rack.

                While the cookies are cooling, prepare the vanilla cream filling. In a bowl, combine the heavy cream and vanilla pudding mix. Whisk until thickened and smooth.

                  Once cookies are cool, hollow out the center of each cookie gently using a small spoon.

                    Fill each hollowed cookie with the vanilla cream mixture.

                      For the chocolate glaze, melt the chocolate chips in a microwave or double boiler. If the chocolate is too thick, add a tablespoon of water until smooth.

                        Spoon or drizzle the melted chocolate over the cookie bites, allowing it to cascade down the sides.

                          Refrigerate the cookie bites for about 30 minutes to set the chocolate glaze.
