6 pork sausages (or your favorite type of sausage)

4 large Yukon Gold potatoes, peeled and cubed

1/2 cup whole milk

4 tablespoons unsalted butter

1 large onion, finely sliced

1 tablespoon olive oil

2 tablespoons Worcestershire sauce

1 teaspoon Dijon mustard

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Sausages: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sausages and cook until they are browned and cooked through, about 15-20 minutes, turning occasionally. Remove the sausages and keep them warm.

    Sauté the Onions: In the same skillet, add the sliced onions. Cook on low heat for about 10 minutes, stirring occasionally, until they are soft and caramelized. Add Worcestershire sauce and mustard, stir to combine, then set aside.

      Boil the Potatoes: While the sausages are cooking, bring a large pot of salted water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes. Drain well.

        Mash the Potatoes: Return the drained potatoes to the pot. Add butter and milk, and mash until smooth and creamy. Season with salt and pepper to taste.

          Plate the Dish: Serve the creamy mashed potatoes on plates, topped with the sausages and the caramelized onion mixture.
