1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 cup boiling water

1 (3 oz) package of Jello (any flavor, suggestions: strawberry or lemon)

1 cup cold water

1 (8 oz) package of cream cheese, softened

1 cup powdered sugar

1 (8 oz) tub of whipped topping (like Cool Whip)

Fresh fruit for garnish (strawberries, blueberries, or raspberries)

Mint leaves for garnish (optional)

Instructions
 

In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.

    Press the crumb mixture firmly into the bottom and up the sides of a pie pan to form the crust. Use the back of a measuring cup to get it nice and tight.

      In a separate bowl, dissolve the Jello in boiling water, stirring until fully dissolved. Then, add the cold water and mix well. Set aside to cool slightly.

        In another large bowl, beat the softened cream cheese until smooth and fluffy. Gradually add the powdered sugar, mixing until well combined.

          Once the Jello mixture has cooled but is still pourable, slowly add it to the cream cheese mixture while mixing on low speed until fully incorporated.

            Gently fold in the whipped topping until the mixture is light and fluffy, ensuring there are no streaks.

              Pour the Jello filling into the prepared crust and spread evenly with a spatula.

                Cover the pie with plastic wrap and refrigerate for at least 4 hours or until firm.

                  Once set, garnish the top with fresh fruit and mint leaves before serving.
