To make a double cheesy smash burger, start with quality ground beef. I use an 80/20 blend, which has just the right fat content. This blend keeps the burger juicy and flavorful. For the cheese, I always choose American cheese. It melts perfectly and adds that creamy touch to each bite.

Ingredients

1 lb ground beef (80/20 blend)

4 slices American cheese

4 burger buns (preferably brioche)

1 tablespoon vegetable oil

Salt and pepper to taste

1/4 cup mayonnaise

2 tablespoons ketchup

1 tablespoon Dijon mustard

1 tablespoon prepared horseradish

1 tablespoon sweet pickle relish

1 teaspoon garlic powder

1 teaspoon smoked paprika

Lettuce leaves

Sliced tomatoes

Pickles for garnish

Instructions

Make the Special New York Sauce: In a small bowl, mix together mayonnaise, ketchup, Dijon mustard, horseradish, sweet pickle relish, garlic powder, and smoked paprika. Adjust seasoning to taste and set aside.

Prepare the Patties: Divide the ground beef into 8 equal portions (about 2 oz each). Roll each portion into a loose ball without overworking the meat. Season each ball generously with salt and pepper.

Heat the Griddle: Heat a large cast-iron skillet or griddle over medium-high heat and add the vegetable oil. Allow it to get hot until shimmering but not smoking.

Smash the Burgers: Place the beef balls on the hot surface, spacing them out evenly. Using a large spatula, smash each ball down until it’s about 1/4 inch thick. Cook for about 2 minutes or until the edges begin to brown.

Add Cheese: Flip the patties and immediately place a slice of American cheese on each patty. Cook for an additional 1-2 minutes until the cheese is melted and the burger is cooked through.

Toast the Buns: While the burgers are cooking, toast the burger buns on the griddle until golden brown.

Assemble the Burgers: Spread a generous amount of the Special New York Sauce on the bottom half of each toasted bun. Layer with lettuce, followed by one burger patty with cheese, then another burger patty. Top with tomato slices, pickles, and the top half of the bun.

Serve: Serve immediately while hot with extra sauce on the side for dipping.
