8 rice paper sheets

1 cup cooked salmon, flaked

1 cup shredded carrots

1 cup cucumber, julienned

1 cup fresh mint leaves

1 cup fresh cilantro leaves

1 cup bean sprouts

1 tablespoon sesame oil

1 tablespoon honey

1 teaspoon lime juice

Salt and pepper to taste

Cooking spray or a few drops of olive oil

Instructions
 

Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper and lightly spray it with cooking spray.

    In a bowl, combine the flaked salmon, shredded carrots, cucumber, mint leaves, cilantro, and bean sprouts. Add sesame oil, honey, lime juice, salt, and pepper. Mix well until evenly combined.

      Fill a large shallow dish with warm water. Take a rice paper sheet and dip it into the warm water for about 10-15 seconds until it softens. Lay it flat on a clean surface.

        Place a small handful of the salmon mixture towards the bottom of the rice paper, leaving space on the sides for folding.

          Fold the sides of the rice paper over the filling, then roll it up tightly from the bottom to the top, like a burrito. Repeat with the remaining rice paper sheets and filling.

            Arrange the spring rolls seam-side down on the prepared baking tray. Lightly brush or spray the tops with a bit of olive oil to help them crisp up.

              Bake in the preheated oven for 12-15 minutes, or until golden brown and crispy. Turn them halfway through baking for even crispiness.

                Remove from the oven and let them cool slightly before serving.
