1 lb large shrimp, peeled and deveined

2 cups cooked jasmine rice

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon ginger, freshly grated

1 tablespoon soy sauce

1 tablespoon sesame oil

1 cup shredded carrots

1 cup cucumber, thinly sliced

2 green onions, finely chopped

Sesame seeds for garnish

Spicy Mayo:

1/2 cup mayonnaise

1 tablespoon sriracha sauce (adjust to taste)

1 teaspoon lime juice

Pinch of salt

Prepare the Spicy Mayo: In a small bowl, combine the mayonnaise, sriracha sauce, lime juice, and a pinch of salt. Mix until well blended. Adjust the sriracha for desired spiciness. Set aside.

    Cook the Shrimp: In a large skillet, heat the olive oil over medium-high heat. Add minced garlic and ginger, sautéing for about 30 seconds until fragrant.

      Add the shrimp to the skillet in a single layer and cook for 2-3 minutes on each side or until they turn pink and opaque. Drizzle with soy sauce and sesame oil, tossing to coat the shrimp evenly. Remove from heat.

        Assemble the Rice Bowls: In each bowl, place a generous portion of jasmine rice at the bottom. Top with the cooked shrimp.
