1 cup quinoa, rinsed

2 cups vegetable broth (or water)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 bell pepper (any color), diced

1 cup black beans, drained and rinsed

1 avocado, diced

¼ cup red onion, finely chopped

¼ cup fresh cilantro, chopped

3 tablespoons olive oil

2 tablespoons lime juice

1 teaspoon cumin

Salt and pepper to taste

Instructions
 

In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil over medium-high heat.

    Once boiling, reduce heat to low, cover, and let it simmer for about 15 minutes or until the liquid is absorbed and the quinoa is fluffy.

      Remove from heat and let the quinoa sit covered for 5 minutes. Fluff with a fork and allow to cool slightly.

        In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, diced bell pepper, black beans, diced avocado, chopped red onion, and cilantro.

          In a small bowl, whisk together the olive oil, lime juice, cumin, salt, and pepper.

            Add the cooled quinoa to the mixing bowl with the vegetables and beans. Pour the dressing over the salad.

              Gently toss everything together until well combined. Adjust seasoning if necessary.

                Let the salad sit for about 10 minutes to allow the flavors to meld.
