1 can (20 oz) sliced pineapple in juice, drained

1/2 cup unsalted butter (1 stick)

1 cup brown sugar, packed

1 cup all-purpose flour

1 cup granulated sugar

1/2 cup milk

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

Maraschino cherries for garnish (optional)

Chopped pecans or walnuts for added texture (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with cooking spray or butter.

    Melt the butter in a small saucepan, then pour it into the prepared cake pan, ensuring the bottom is evenly coated.

      Sprinkle the brown sugar over the melted butter in the pan, spreading it evenly.

        Arrange the drained pineapple slices on top of the brown sugar mixture. Place a cherry in the center of each pineapple slice and sprinkle chopped nuts around if desired.

          In a mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Whisk until well mixed.

            In another bowl, beat the eggs, and then add the milk and vanilla extract. Mix until combined.

              Pour the wet ingredients into the dry ingredients, stirring gently until just combined (do not overmix).

                Pour the batter over the arranged pineapple in the cake pan, spreading it evenly.

                  Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

                    Once baked, let the cake cool in the pan for about 10 minutes. Carefully invert the cake onto a serving platter while it’s still warm to release the pineapple topping.

                      Let it cool completely before slicing.
