Ingredients

4 medium russet potatoes, washed and scrubbed

1 cup sour cream

1/2 cup unsalted butter, softened

1/4 cup buttermilk

1 cup shredded cheddar cheese

1/2 cup chopped green onions

1/4 cup crispy bacon bits

1/2 cup mini marshmallows

1/4 cup chocolate syrup

1 teaspoon smoked paprika

Salt and pepper to taste

Instructions

Preheat your oven to 400°F (200°C).

Pierce the potatoes with a fork and place them directly on the oven rack. Bake for about 45-50 minutes or until fork-tender. Remove and let cool slightly.

While the potatoes are baking, in a medium bowl, combine sour cream, softened butter, buttermilk, smoked paprika, salt, and pepper. Mix until creamy and well combined.

Once the potatoes are cool enough to handle, slice them in half lengthwise. Scoop out the insides into a large mixing bowl, leaving a little potato to maintain the structure of the skins.

Mash the scooped potato with the creamy mixture until smooth. Fold in the shredded cheddar cheese, chopped green onions, and crispy bacon bits. Adjust seasoning as necessary.

Refill the potato skins with the mashed potato mixture, mounding it slightly on top.

Top each potato with mini marshmallows and drizzle with chocolate syrup for a unique twist.

Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes until heated through and marshmallows are slightly golden.

Remove from the oven and let cool for a few minutes before serving.
