Delicious Caprese Panini with Fresh Mozzarella Tomatoes and Basil Recipe

4 slices of ciabatta or sourdough bread

8 ounces fresh mozzarella cheese, sliced

1 large ripe tomato, sliced

A handful of fresh basil leaves

2 tablespoons balsamic reduction

2 tablespoons pesto sauce

2 tablespoons olive oil

Salt and freshly cracked black pepper to taste

Instructions
 

Preheat a panini press or a skillet over medium heat.

    Brush one side of each slice of bread with olive oil. This will be the outside of the panini to achieve a golden crust.

      On the non-oiled side of two slices of bread, spread a layer of pesto sauce evenly.

        Layer the sliced fresh mozzarella over the pesto, followed by the slices of tomato.

          Sprinkle salt and freshly cracked black pepper over the tomatoes.

            Top with fresh basil leaves, and then drizzle balsamic reduction over the basil.

              Place the other two slices of bread on top, oiled side facing out, to create a sandwich.

                Carefully place the assembled paninis in the preheated panini press or skillet. If using a skillet, press down with a heavy pan to help toast evenly.

                  Cook for about 3-5 minutes until the bread is golden brown and the cheese has melted. If using a skillet, flip the panini halfway through for even toasting.

                    Once done, remove from heat and let it rest for a minute before slicing.

                      - Presentation Tips: Slice the paninis diagonally and serve on a wooden board. Garnish with extra basil leaves and a small bowl of balsamic reduction for dipping.
