In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat with a hand mixer until smooth and creamy.
Gently fold in the graham cracker crumbs and mini chocolate chips until well combined.
Using a small cookie scoop or your hands, form the mixture into bite-sized balls and place them onto a baking sheet lined with parchment paper.
Freeze the cheesecake balls for about 30 minutes or until firm.
While the bites are freezing, melt the dark chocolate in a microwave-safe bowl in 30-second intervals, stirring in between, until fully melted and smooth.
Once the cheesecake bites are firm, dip each bite into the melted chocolate, making sure they are fully coated. Use a fork to lift them out and let any excess chocolate drip off.
Place the chocolate-covered bites back onto the parchment-lined baking sheet. If desired, sprinkle with colorful sprinkles or crushed nuts before the chocolate sets.
Refrigerate the bites for about 15 minutes or until the chocolate hardens.
Notes
Serve these cheesecake bites chilled on a decorative platter, perfect for parties or as a delightful dessert treat.
