1 cup quinoa, rinsed

2 cups vegetable broth

1 medium butternut squash, peeled and diced

1 tablespoon olive oil

1 teaspoon cinnamon

1/2 teaspoon nutmeg

Salt and pepper to taste

1 cup black beans, drained and rinsed

1/2 cup dried cranberries

1/4 cup chopped pecans (or walnuts)

2 green onions, sliced

Fresh parsley for garnish

Instructions
 

Preheat the oven to 400°F (200°C).

    On a baking sheet, spread the diced butternut squash and drizzle with olive oil, cinnamon, nutmeg, salt, and pepper. Toss to coat evenly.

      Roast the butternut squash in the preheated oven for 20-25 minutes, or until golden brown and tender.

        In a medium saucepan, bring vegetable broth to a boil. Add rinsed quinoa, reduce heat to low, cover, and simmer for about 15 minutes, or until liquid is absorbed.

          Once cooked, remove quinoa from heat and let it sit covered for 5 minutes, then fluff with a fork.

            In a large mixing bowl, combine the cooked quinoa, roasted butternut squash, black beans, dried cranberries, and chopped pecans.

              Gently mix until all ingredients are well incorporated.

                Taste and adjust seasoning if needed.

                  Serve warm, topping with sliced green onions and fresh parsley for garnish.
