2 cups dried white beans (such as navy or cannellini), rinsed and soaked overnight

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

2 medium tomatoes, diced

4 cups vegetable broth

1 teaspoon cumin

1 teaspoon smoked paprika

1 bay leaf

Salt and pepper to taste

2 cups kale or spinach, chopped

Juice of 1 lime

Fresh cilantro, chopped for garnish

Instructions
 

Drain and rinse the soaked beans. In a large pot, add the beans and cover them with fresh water. Bring to a boil, then reduce to a simmer and cook for about 1 hour or until tender. Drain and set aside.

    In the same pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.

      Stir in the minced garlic, red bell pepper, and green bell pepper. Cook for another 3-4 minutes until the peppers soften.

        Add the diced tomatoes, cooked beans, vegetable broth, cumin, smoked paprika, and bay leaf. Mix well and bring to a boil.

          Lower the heat and let it simmer for 30 minutes. Season with salt and pepper to taste.

            Stir in the chopped kale or spinach and let it cook for an additional 5 minutes until the greens are tender.

              Remove the bay leaf and stir in the lime juice before serving.
