2 medium carrots, grated

3 celery stalks, chopped

1 bell pepper (any color), diced

1/4 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

3 tablespoons olive oil

1 tablespoon apple cider vinegar

Salt and pepper to taste

1 teaspoon honey (optional)

Instructions
 

In a large bowl, combine the diced cucumber, grated carrots, chopped celery, diced bell pepper, and red onion.

    Add the chopped parsley and, if desired, the crumbled feta cheese to the bowl.

      In a small mixing bowl, whisk together the olive oil, apple cider vinegar, honey (if using), salt, and pepper until well combined.
