3-4 lbs pork shoulder (or butt), boneless

1 tablespoon smoked paprika

2 teaspoons garlic powder

2 teaspoons onion powder

1 teaspoon cayenne pepper (optional, for heat)

1 teaspoon salt

1 teaspoon black pepper

1 cup low-sodium chicken broth

1 cup apple cider vinegar

1/2 cup brown sugar

1/2 cup BBQ sauce (plus extra for serving)

1 tablespoon Worcestershire sauce

1 tablespoon olive oil

1 onion, sliced

4 hamburger buns (for serving)

Coleslaw (for topping, optional)

Instructions
 

In a small bowl, mix together the smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper to create a spice rub.

    Rub the spice mixture evenly over the entire pork shoulder, making sure to coat all sides.

      In a large skillet, heat olive oil over medium-high heat. Once hot, sear the pork on all sides until browned (about 4-5 minutes per side). This step adds depth of flavor.

        Transfer the seared pork to the crockpot. Add the sliced onion, chicken broth, apple cider vinegar, brown sugar, Worcestershire sauce, and BBQ sauce to the pot.

          Cover and cook on LOW for 8-10 hours, or on HIGH for 4-6 hours, until the meat is tender and easily shreddable with a fork.

            Once cooked, remove the pork from the crockpot and allow it to rest for a few minutes. Use two forks to shred the meat into bite-sized pieces.

              Mix the pulled pork with the juices from the crockpot and additional BBQ sauce to taste for further flavor.

                Serve the pulled pork on hamburger buns, topped with coleslaw if desired.
