4 boneless, skinless chicken breasts

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning (or homemade: 1 tsp chili powder, 1 tsp cumin, 1 tsp paprika, ½ tsp garlic powder, ½ tsp onion powder, salt to taste)

1 cup chicken broth

1 red bell pepper, diced

1 green bell pepper, diced

1 small red onion, finely chopped

Juice of 1 lime

Fresh cilantro, for garnish

Avocado slices, for serving (optional)

Instructions
 

Begin by placing the chicken breasts at the bottom of the crockpot, ensuring they are spread out evenly.

    In a mixing bowl, combine the black beans, corn, diced tomatoes (with their juice), and the diced bell peppers and onion. Stir to mix well.

      Add the taco seasoning to the mixture and toss until the veggies are well-coated.

        Pour the vegetable mixture over the chicken in the crockpot, spreading it evenly.

          Pour the chicken broth around the edges of the crockpot (to avoid washing off the seasoning from the chicken).

            Secure the lid on the crockpot and cook on low for 6-8 hours or high for 4-5 hours, until the chicken is cooked through and shreds easily.

              Once done, shred the chicken directly in the crockpot using two forks, stirring it into the beans and salsa mixture for full flavor integration.

                Add lime juice and give it one last good mix.

                  Serve hot, garnished with fresh cilantro and avocado slices if desired.
