Ingredients

4 boneless, skinless chicken breasts

1 cup wild rice blend

4 cups chicken broth

1/2 cup unsalted butter, melted

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon dried parsley

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1 cup chopped carrots

1 cup chopped celery

1 small onion, diced

Fresh parsley for garnish

Instructions

Prepare the Chicken: In a small bowl, mix the melted butter, minced garlic, thyme, rosemary, parsley, onion powder, salt, and black pepper together.

Layer Ingredients: Place the wild rice blend at the bottom of the crockpot. Pour in the chicken broth. Add the chopped carrots, celery, and diced onion on top of the rice.

Add Chicken: Place the chicken breasts on top of the vegetables. Pour the herb butter mixture over the chicken, making sure to coat it evenly.

Cook: Cover the crockpot and set it on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and the rice is tender.

Shred Chicken: About 30 minutes before serving, shred the chicken directly in the crockpot using two forks. Stir everything together to mix the flavors.

Serve: Once cooked, taste and adjust seasonings if required. Serve hot, garnished with fresh parsley.

              Prep Time: 15 minutes | Total Time: 8 hours | Servings: 4-6

                - Presentation Tips: Serve the dish in deep bowls, with additional parsley sprinkled on top for a pop of color. A sprinkle of fresh black pepper just before serving can enhance the aroma.
