1 lb ground beef

1 lb ground pork

1 cup French onion soup (canned or homemade)

1 cup breadcrumbs (plain or seasoned)

1/2 cup shredded Swiss cheese, plus extra for topping

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried parsley

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

In a large mixing bowl, combine the ground beef and ground pork.

    Add the finely chopped onion, minced garlic, breadcrumbs, half a cup of French onion soup, Worcestershire sauce, thyme, parsley, salt, and pepper. Mix until just combined. Avoid overmixing to keep the meatloaf tender.

      Shape the mixture into a loaf form and place it into the crockpot.

        Pour the remaining French onion soup over the meatloaf, ensuring it's well-coated.

          Cover and cook on low for 6-8 hours or on high for 3-4 hours until the internal temperature reaches 160°F (70°C).

            During the last 30 minutes of cooking, sprinkle the top of the meatloaf with the remaining shredded Swiss cheese. Cover the crockpot and allow the cheese to melt.

              Once cooked, carefully transfer the meatloaf to a cutting board and let it rest for about 10 minutes.

                Slice the meatloaf and serve it warm, garnished with fresh parsley.
