4 cups green cabbage, finely shredded

1 cup carrots, grated

1/2 cup scallions, chopped

1 cup all-purpose flour

2 large eggs

1 teaspoon baking powder

1 teaspoon garlic powder

Salt and pepper to taste

Oil for frying (vegetable or canola)

For the Garlic Sauce:

1/2 cup Greek yogurt

2 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon fresh dill, chopped (or 1/2 teaspoon dried dill)

Salt and pepper to taste

In a large mixing bowl, combine the shredded cabbage, grated carrots, and chopped scallions. Mix well and let sit for about 10 minutes to draw out excess moisture.

    After 10 minutes, gently squeeze the vegetables to remove any excess water. This helps the fritters to be crispy.

      Add the flour, eggs, baking powder, garlic powder, salt, and pepper to the bowl with the vegetables. Mix until the batter is well combined but still slightly lumpy, ensuring the cabbage and carrots remain intact.

        In a deep skillet or frying pan, heat about 1/2 inch of oil over medium heat until shimmering (around 350°F or 175°C).

          Using a tablespoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil, flattening slightly with the back of the spoon. Cook in batches to avoid overcrowding the pan.

            Fry the fritters for 3-4 minutes on each side, or until golden brown and crispy. Once done, remove from the oil and place on a paper towel-lined plate to absorb excess oil.

              While the fritters are frying, prepare the garlic sauce by mixing together Greek yogurt, minced garlic, lemon juice, chopped dill, salt, and pepper in a small bowl. Adjust seasoning to taste.
