6 small to medium-sized baby potatoes (Yukon Gold or red potatoes work well)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

½ cup shredded cheddar cheese

½ cup cooked bacon, crumbled (or turkey bacon for a lighter option)

¼ cup sour cream

2 green onions, thinly sliced

Fresh chives, for garnish

Instructions
 

Preheat the oven: Preheat your oven to 425°F (220°C).

    Prepare the potatoes: Wash and scrub the baby potatoes thoroughly. Pat them dry with a towel.

      Slice the potatoes: Place a potato between two chopsticks or wooden spoons to prevent cutting all the way through. Carefully slice the potato into thin slices (about 1/8 inch apart), stopping just before the chopsticks to create a fan effect. Repeat with all potatoes.

        Seasoning: In a bowl, mix together olive oil, garlic powder, smoked paprika, salt, and pepper. Brush this mixture generously over each potato, making sure it seeps into the slices.

          Bake the potatoes: Arrange the seasoned potatoes on a baking sheet lined with parchment paper. Bake in the preheated oven for about 30 minutes.

            Add toppings: After 30 minutes, remove the potatoes from the oven and sprinkle the shredded cheddar cheese and crumbled bacon over the top. Return them to the oven for another 10-15 minutes, or until the cheese is melted and bubbly, and the edges of the potatoes are crispy.

              Finish and serve: Take out the potatoes and let them cool slightly. Drizzle with sour cream and sprinkle with sliced green onions and fresh chives for added flavor and freshness.
