Ingredients

1 pound fresh asparagus, trimmed

1 cup grated Asiago cheese

1/2 cup breadcrumbs (panko for extra crunch)

2 large eggs

1/4 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

Olive oil for drizzling

Instructions

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

In a shallow bowl, combine the flour, garlic powder, onion powder, paprika, salt, and pepper.

In a second shallow bowl, beat the eggs until frothy.

In a third shallow bowl, mix the breadcrumbs and grated Asiago cheese together.

Take each asparagus spear and first dredge it in the flour mixture, shaking off any excess.

Dip the floured spear into the beaten eggs, letting any excess drip off.

Finally, coat the spear with the breadcrumb and Asiago mixture, pressing gently to ensure it sticks.

Place the coated asparagus spears on the prepared baking sheet. Drizzle lightly with olive oil for a golden crisp.

Bake in the preheated oven for about 15-20 minutes, or until the asparagus is tender and the coating is golden brown and crispy.

Remove from the oven and let cool slightly before serving.
