For the Crust:

1 ½ cups graham cracker crumbs

¼ cup granulated sugar

½ cup unsalted butter, melted

For the Cheesecake Filling:

16 oz cream cheese, softened

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup sour cream

¼ cup heavy cream

For the Brûlée Topping:

4 tablespoons granulated sugar (for topping)

Instructions
 

Prepare the Crust:

    - Preheat your oven to 325°F (160°C).

      - In a large bowl, mix the graham cracker crumbs and sugar together.

        - Stir in the melted butter until the mixture resembles wet sand.

          - Press the mixture firmly into the bottom of a lined 9x9-inch baking pan to form an even layer.

            - Bake the crust for 8-10 minutes or until lightly golden. Remove from the oven and let it cool.

              Make the Cheesecake Filling:

                - In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth.

                  - Gradually add the granulated sugar and continue mixing until creamy and well-blended.

                    - Add the eggs one at a time, mixing well after each addition.

                      - Stir in the vanilla extract, sour cream, and heavy cream until the mixture is fully combined and silky.

                        Combine and Bake:

                          - Pour the cheesecake filling over the cooled crust, spreading it evenly.

                            - Bake in the preheated oven for 30-35 minutes or until the center is set but still slightly jiggly.

                              - Turn off the oven and leave the cheesecake bars inside for another 10 minutes.

                                - Remove from the oven and cool at room temperature for 1 hour, then refrigerate for at least 4 hours, preferably overnight.

                                  Brûlée the Topping:

                                    - Once chilled, sprinkle an even layer of granulated sugar over the top of the cheesecake bars.

                                      - Using a kitchen torch, carefully melt the sugar until it caramelizes to a golden brown and the sugar bubbles. (If you don’t have a torch, place under a broiler for about 1-2 minutes, watching closely to prevent burning.)

                                        - Allow the topping to harden for a few minutes at room temperature before slicing into bars.

                                          Serve and Enjoy:

                                            - Carefully lift the bars from the pan using the parchment paper. Cut into even squares for serving.
