1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 cups cream cheese, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

2 teaspoons lemon juice

1 cup heavy cream

Preheat Oven: Begin by preheating your oven to 325°F (160°C).

    Prepare Crust: In a bowl, mix the graham cracker crumbs and melted butter until combined. Press this mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until lightly golden. Remove from oven and let cool.

      Make Filling: In a large mixing bowl, combine the softened cream cheese and 1 cup of granulated sugar. Beat with an electric mixer until smooth.

        Add Eggs: Add the eggs one at a time, mixing on low speed after each addition until just incorporated.

          Flavoring: Mix in the vanilla extract and lemon juice. Gradually add the heavy cream and blend until the mixture is creamy and well-combined.

            Bake Cheesecake: Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for about 50-60 minutes, or until the center is just set but still slightly jiggly.
