12 oz rigatoni pasta

1 lb sirloin steak, cut into thin strips

8 oz cremini mushrooms, sliced

1 medium onion, diced

3 cloves garlic, minced

1 cup heavy cream

1 cup beef broth

1 teaspoon Dijon mustard

1 cup grated Parmesan cheese

2 tablespoons olive oil

2 tablespoons fresh parsley, chopped

Salt and pepper to taste

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rigatoni and cook according to package instructions until al dente. Drain and set aside.

    Sear the Steak: In a large skillet over medium-high heat, heat 1 tablespoon of olive oil. Season the steak strips with salt and pepper. Add them to the skillet in a single layer and sear for about 2-3 minutes until browned. Remove from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add diced onion and sliced mushrooms. Sauté for about 5-7 minutes until the onion is translucent and mushrooms are golden brown.

        Add Garlic: Stir in minced garlic and cook for an additional minute until fragrant.

          Create the Sauce: Lower the heat and pour in the beef broth. Stir in Dijon mustard and let it simmer for 3-4 minutes. Then add the heavy cream, stirring until well combined. Allow the mixture to simmer for another 5 minutes until slightly thickened.

            Combine Everything: Add the cooked rigatoni to the skillet along with the seared steak. Stir gently to coat the pasta and steak in the creamy sauce. Add grated Parmesan cheese and mix until melted and creamy. Adjust seasoning with salt and pepper as needed.

              Serve: Remove from heat and garnish with freshly chopped parsley before serving.
