8 ounces of pasta (penne or fettuccine)

2 tablespoons olive oil

3 cloves garlic, minced

4 cups fresh spinach, roughly chopped

1 cup heavy cream

1 cup grated Parmesan cheese

1/2 teaspoon nutmeg

Salt and pepper to taste

1/4 cup sun-dried tomatoes, sliced (optional)

Fresh basil for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté the Garlic: In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant and lightly golden.

      Add Spinach: Stir in the chopped spinach and cook until wilted, about 2-3 minutes.

        Make the Sauce: Lower the heat and pour in the heavy cream. Stir well to combine, then add the grated Parmesan cheese, nutmeg, salt, and pepper. Continue to stir until the cheese is melted and the sauce is creamy.

          Combine Pasta and Sauce: Add the cooked pasta to the sauce, tossing to combine. If the sauce is too thick, gradually add some reserved pasta water until desired consistency is reached.

            Final Touches: If using, stir in the sliced sun-dried tomatoes for an added burst of flavor. Adjust seasoning with more salt and pepper as needed.

              Serve: Plate the creamy spinach pasta and garnish with fresh basil leaves and extra Parmesan if desired.
