4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup carrots, diced

4 cups vegetable broth

1 cup heavy cream (or coconut cream for a lighter variant)

2 tablespoons olive oil

2 teaspoons dried thyme

Salt and black pepper to taste

Fresh chives, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, until it begins to soften.

    Add the minced garlic and diced carrots to the pot, and sauté for an additional 2-3 minutes until the garlic is fragrant.

      Stir in the diced potatoes, dried thyme, salt, and pepper. Cook for another 2 minutes, mixing everything well.

        Pour in the vegetable broth, ensuring all the vegetables are submerged. Bring to a boil, then reduce the heat and let it simmer for 20 minutes, or until the potatoes are tender.

          Once done, remove the pot from heat. Using an immersion blender, blend the soup until smooth and creamy. If using a regular blender, allow the soup to cool slightly and then blend in batches.

            Return the pot to low heat, and stir in the heavy cream (or coconut cream). Allow the soup to warm through for another 5 minutes, adjusting seasoning to preference.

              Remove from heat and ladle into bowls. Garnish with chopped fresh chives before serving.
