1 package (16 oz) frozen pierogi (potato and cheese variety)

1 lb turkey sausage, sliced into rounds

1 medium onion, diced

2 cloves garlic, minced

2 cups baby spinach

1 cup heavy cream

1 cup shredded sharp cheddar cheese

2 tablespoons olive oil

1 tablespoon Dijon mustard

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Sausage: In a large skillet, heat olive oil over medium heat. Add the sliced turkey sausage and cook until browned on both sides, about 5-7 minutes. Remove from the skillet and set aside.

    Sauté the Vegetables: In the same skillet, add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

      Cook the Pierogi: Add the frozen pierogi to the skillet (no need to thaw) and pour in about 1/2 cup of water. Cover the skillet with a lid and cook for 8-10 minutes, allowing the steam to cook the pierogi.

        Combine Ingredients: Once the pierogi are cooked, remove the lid and add the cooked turkey sausage back into the skillet along with the heavy cream and Dijon mustard. Stir well to combine all ingredients.

          Add Spinach and Cheese: Fold in the baby spinach and continue to stir until the spinach wilts. Then, add the shredded cheddar cheese and mix until melted and creamy.

            Season: Add salt and pepper to taste, adjusting according to your preference.

              Serve: Once everything is combined, remove from heat and let cool slightly. Serve hot, garnished with chopped fresh parsley.
