1 tablespoon olive oil

1 pound Italian sausage (casings removed)

1 medium onion, diced

3 cloves garlic, minced

3 medium carrots, diced

2 celery stalks, diced

4 cups chicken broth

1 (14.5 oz) can diced tomatoes with basil, garlic, and oregano

1 cup ditalini pasta

1 cup heavy cream

1 cup freshly grated Parmesan cheese

2 cups baby spinach

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

In a large pot, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a spoon as it cooks. Sauté until browned, about 5-7 minutes.

    Add the diced onion, garlic, carrots, and celery to the pot, cooking until the vegetables are tender, approximately 5 minutes.

      Pour in the chicken broth and add the diced tomatoes. Stir to combine and bring the mixture to a gentle boil.

        Once boiling, add the ditalini pasta. Cook according to package instructions until al dente, usually about 8-10 minutes.

          Lower the heat and stir in the heavy cream and Parmesan cheese, letting it melt and create a creamy broth.

            Add the baby spinach and stir until wilted, about 2 minutes. Season with salt and pepper to taste.
