500g mixed mushrooms (button, cremini, shiitake), sliced

1 medium onion, finely chopped

3 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon miso paste (optional, for umami depth)

4 cups vegetable broth

1 cup heavy cream (or coconut milk for a vegan option)

2 tablespoons soy sauce

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes).

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the sliced mushrooms to the pot and cook until they release their moisture and become golden brown, about 8-10 minutes.

        Sprinkle in the dried thyme and miso paste (if using), mixing well to combine the flavors.

          Pour in the vegetable broth and bring to a simmer. Let it cook for about 15 minutes to allow the flavors to meld.

            Use an immersion blender to puree the soup until smooth, or alternatively, transfer in batches to a blender. Be cautious with hot liquid!

              Return the pureed soup to the pot and stir in the heavy cream and soy sauce. Heat the soup without boiling, and season with salt and pepper to taste.

                Allow the soup to simmer for another 5 minutes before serving.
