4 salmon fillets

2 tablespoons olive oil

3 cups fresh mushrooms, sliced (such as cremini or button)

4 cloves garlic, minced

1 cup heavy cream

1 cup fresh spinach

1 teaspoon dried thyme

1 teaspoon lemon zest

Salt and pepper to taste

Prepare the Salmon: Pat the salmon fillets dry with a paper towel and season both sides generously with salt and pepper.

    Sear the Salmon: In a large skillet, heat the olive oil over medium-high heat. Add the salmon fillets, skin-side down (if applicable), and sear for about 4-5 minutes until golden brown. Flip the fillets and cook for an additional 3-4 minutes until cooked through. Remove from the pan and set aside.
